The most rewarding part of my job is hearing from newlyweds about how special their Florida Keys wedding was, and how much their guests enjoyed their time at Hawks Cay Resort. Our planning and event staff genuinely care about providing groups a memorable experience—especially the brides and grooms—and it's refreshing to know that we were able to be part of such a special moment in their lives.

Before working at Hawks Cay I honed my catering and events skills in New York City where I was responsible for overseeing the catering team at luxury properties such as The Benjamin and Hotel Plaza Athenee. Aside from weddings I also handle social and reunion sales, and catering sales (such as the local Chamber of Commerce events).

I wanted to share 12 Healthy Bride Tips from http://www.healthy-bride.com 1 - Have fun! This is the number one thing to remember, always. 2 - Exercise- not only will your health improve, and your stress will also be reduced. 3 days per week is the minimum...4 is better if you are trying to make change. 3 - Attitude. Life is what you make it...make yours sparkle with joy. 4 - Lifestyle. Consider your lifestyle as a whole. Exercise, Eating, Entertaining, Earning.... are they in balance. Take a careful look at your life, and try to keep your "wants" balanced with your "needs". 5 - Time management. Delegate. Don't take on more than you can do. 6 - Habits. Think about using this time to develop some healthy habits around good nutrition, stress management and exercise. 7 - You! Make sure you take time for you. 8 - Buff. Make sure weight training is part of your exercise program. Two days per week minimum. 9 - Rest. Get plenty of sleep, and sleep on a regular schedule - you will feel more rested. 10 - I deserve the best..... This is your mantra.... from this day forward. 11 - Diet. Focus on eating whole grains; plenty of fruits and veggies; calcium rich foods; and lean protein. 12 - Energy. If you follow the above 11 items, you will have positive, infectious, endless energy.

Sunrise Weddings, I love new beginnings February 17, 2011

People always associate the Keys with beautiful sunsets and the sunsets are absolutely beautiful but you don’t realize how beautiful the sunrises are until you experience it yourself. I was just reminded how magnificent the sunrises truly are this week when Hawks Cay hosted a sunrise wedding. Family and friends gathered to witness the wedding ceremony as the sun began to rise over the tranquil waters of the keys. The ceremony was followed by a brunch reception with our chef adding his own creative spin on some of our traditional brunch favorites. The sweet and savory crepes are incredible. After brunch wedding guests were on their own to enjoy all of the activities that the resort has to offer or…to simply relax by the pool. Later that evening, guests gathered to end the day with a sunset cruise on Blue. What a way for a couple to begin their lives together.

Sangria on Blue September 21, 2010

I just spent a little time with one of our bartenders while he was mixing a beverage that I have come to love even more living in the tropics. He was preparing red and white sangria for a sun set cruise on Blue this evening. We are all about the water here in the Keys, in the water and on the water. Cruising the ocean with friends and family, enjoying the sun’s reflections on the water while sipping a cool glass of sangria is a true Keys experience. Here is a recipe for red sangria that I am happy to share with you. Alma’s Rich Sangria 3 bottles of dry red wine (Rioja, Merlot, Chianti, Shiraz) And you can use Grenache, Syrah, and Cabernet for rich concentrated fruit flavors 1 cup of fresh OJ 1 cup of brandy 1 green and red apple 1 orange 1 lemon 1 lime Star anise, powdered cloves or allspice, cinnamon sticks Champagne grapes can be frozen and added when served Fresh berries (Strawberries, raspberries, blackberries) ¾ cup of sugar - Add more to taste Dice apples into small cubes Cut citrus into quarters and slice into small wedges Combine all ingredients in large container Mix well Add 10 whole star anise 3 cinnamon sticks Sprinkle with cloves or allspice to taste Cover and refrigerate for 2 hours

Culinary Treasures in the Florida Keys September 14, 2010

My team and I really do love living in the Florida Keys and we try to incorporate what the Keys has to offer into all of our events. It’s always a good idea to select menu items that are indigenous to Florida Keys. One of my favorites is Key West Pink Shrimp. Key West Pinks are shrimp that are harvested right here in the waters of the Florida Keys. Adding a Raw Bar to your reception to include Keys West Pink Shrimp, Gulf Oysters, Stone Crab Claws, Florida Lobster and Conch Ceviche is a great way for you and your guests to experience the culinary treasures that we are able to enjoy every day as residents of the Conch Republic! Some people may not realize that the Florida Keys is only 90 miles from Cuba. We are closer to Cuba then we are to Miami! We enjoy incorporating the Cuban culture into our events. We like to start by passing mojitos as a welcome cocktail to your guests as they arrive at the reception. We will setup a Mojito Bar serving traditional and mango mojitos. To continue the theme, you may want to serve a suckling pig at your reception; our culinary team will start by marinating the pork in mojo; then on the day of the wedding slowing cooking the roast all day until the meat falls off of the bone. I recommend pairing this with the Conch and Chorizo Fried Rice. This will definitely give you and your guests the felling of being in the tropics.
