The day-to-day dining experience at Hawks Cay is the vision of Executive Chef Tony Glitz. He joins the Hawks Cay team after nearly 10 years cooking at various Four Seasons resorts throughout the world with on-property restaurants that boast AAA Five Diamond award-winning reputations. At Hawks Cay, Chef Tony brings his expertise to the menus of Tom’s Harbor House, Beach Grill, Terrace, and Indies Grill, giving each its own distinct flavor and atmosphere for exquisite dining. Chef Tony is also the mastermind behind all of Hawks Cay’s catering and special event menus.

Chef Charlotte Miller

Charlotte Miller, head chef at Tom’s Harbor House Restaurant at Hawks Cay Resort in the Florida Keys, has worked in the food industry since 2000, and she received a degree in culinary arts from the New England Culinary Institute. Her passion for the Keys influences her delectable creations at Tom's Harbor House. It also has earned her first place in "Taste of the Keys" seafood category. When she's not in the kitchen, Chef Charlotte enjoys fishing, snorkeling and sailing in the beautiful blue-green waters at Hawks Cay.
